

Chaource, a town in Aube’s Champagne region, has given its name to an officially recognized cheese. This cheese now has its own museum which is unique in Champagne Ardenne. The fruit of a collector’s enthusiasm, it was created to pay homage to Chaource, of course, but also to promote the history of a number of Aube’s cheeses and its artisan cheese making industry.
The tradition of Chaource, a round, soft, cow’s milk cheese, is firmly rooted in history. It is said that since the Middle Ages, people living in the Chaource region have presented the Bishop of Langres with 132 cheeses at New Year (each farm, each farmer’s wife had her own secret).
ÂThe hundreds of items on display originate from all over France, but mainly from Aube and the Pyrenees.
