There’s a nice surprise waiting for you in the dining room with its elegant atmosphere where the perfectly arranged tables signify a perfectly run establishment. You’ll appreciate the gracious welcome, timely attention and a quite remarkable wine list, especially the champagne, some of which is rare. The food menu is a delight, too, with its neo-traditional character and the variously excellent produce prepared with the utmost care. They inspire the chef to conjure up two excellent versions of foie gras (as a terrine and cooked a la plancha, served as a single starter). He also has a flair for local fare, turning Troyes AAAAA sausage into a premium dish. The service is in keeping with the rest of the outfit – attentive and very professional.
