Scallops in carpaccio and tartare, passion fruit with mango/passion fruit coulis. Pike-perch/lobster sausage, lightly creamed bisque, braised fennel. While waiting for the main course: The "trou champenois" (a small glass of sparkling wine served between courses). Veal tenderloin with herb crumble, winter vegetable tart with truffle butter, Chaource cheese, mascarpone and dried fruit, and a bouquet of salad. The stroke of midnight...
