Thursday, January 1st: CHAOURCE - Cadusia New Year's Menu. NEW YEAR'S MENU AT €58 (starter – palate cleanser – main course – cheese – dessert) AT €68 with fish* Amuse-bouche: Dubarry velouté with truffled Chantilly cream / Scallops in carpaccio and tartare, passion fruit with mango/passion fruit coulis. Pike-perch/lobster sausage, lightly creamed bisque, braised fennel*. While waiting for the main course: Champagne palate cleanser. Veal tenderloin with herb crumble, winter vegetable tart with truffle butter. Chaource Mascarpone and dried fruit, mixed salad.
